The weather is turning, and my favorite time of year is upon us. Fall is special to me because of many things. Harvest, mild weather and warm comforting dishes top my list of why this time of year is so special to me. Soups, comforting pasta dishes and nice crockpot roast recipes make for easy-cookin’ with little prep time. However, I’m always short on ‘sides’ for these warm comforting dishes.
Biscuits, or other bread type side are my favorite to accompany these comfort dishes. They sop and mop up sauce and are so hearty. Adding AE Sour Cream to biscuits has always been part of my ‘drop biscuit’ (the kind you don’t have to roll out and cut with a biscuit cutter, rather drop dough from a spoon onto a sheet pan) game… however, adding the flavored AE Toasted Onion Sour Cream Dip to this biscuit amped up the flavor significantly. The Farmer’s Cheese in the biscuits is what you see stretched apart in the photo above. What you can’t see… the small toasted onion pieces laced throughout the biscuit. Yum.
I don’t know why I never thought to swap regular AE Sour Cream with their flavored sour cream dips in my savory baking, talk about a happy discovery. The kids gobbled these up. I served them to my daughter after school and she ate hers with honey which was actually delicious. The next day, these were still lovely, with a kiss of warmth from the microwave.
The dough is simply mixed and then scooped up with an ice cream scoop and laid onto a lined baking sheet. The recipe comes together faster than your oven can preheat!
Next up… I’m adding AE Chive Sour Cream Dip to my homemade dinner rolls. Simple substitutions can really boost flavor in different baked goods!
Toasted Onion Sour Cream Biscuits
with Bacon, Farmer’s Cheese and Chives
By: Cristen www.foodandswine.com
Ingredients:
2 cups all purpose flour
2 TBSP granulated sugar
1/2 tsp salt
1/4 tsp black pepper
2 tsp baking powder
1 tsp baking soda
6 TBSP butter, well chilled, cubed
3/4 C milk
3/4 C AE Toasted Onion Sour Cream Dip
1/2 C vegetable oil
1 TBSP vinegar
4 strips cooked bacon, chopped
1/2 C farmer’s cheese chopped or grated (use up to 3/4 C if you LOVE cheese!)
*for this recipe I actually had no shredded cheese so I chopped slices and it worked great!
1/4 C chopped fresh chives (or you could substitute green onion tops too)
2 TBSP melted butter, for garnish
In a large mixing bowl combine flour, sugar, salt, pepper, baking powder and baking soda, whisk well. Cut in butter until coarse crumbs appear like this:
In a large liquid measuring cup combine milk, AE Toasted Onion Sour Cream Dip, oil and vinegar, whisk well. Fold wet mixture into dry mixture/butter until nearly combined. Do not overmix. Add bacon, cheese and chives. Fold only until combined. Drop mixture by 1/4 cup scoopfuls onto baking sheet.
Bake at 425 degrees F for 12-14 minutes until golden. Remove from oven and brush with melted butter. Serve warm. Makes 1 dozen biscuits.
