If you happen to know me well, you’ll know that the traditional S’more is one of my favorite treats. #1: It absolutely screams summer and camp-outs and #2: It is the perfect ratio of crunch/graham, to richness/chocolate and sweetness/mallow. Plus they make these in the clubhouse on one of my favorite movies of all time “The Sandlot”. (A super cute innocent movie about little boys, baseball and a large un-scary dog. “Babe Ruth” even makes a heavenly cameo.) When Hamilton Porter (the chunky hunky red-haired catcher) said… “First you take the graham…” while making these on the movie, I was smitten and I still say that to this day when throwing a S’more together. I bet some of you do too. Do you want a S’more? Smalls: “Some-more of what?” “I haven’t even had anything?!” I love that movie.
This cupcake recipe is one I stumbled upon and it comes from the Martha Stewart website. I’ll let her show you how to do it because the recipe is well put together and she’s the Queen, obvs.
I used a rounded pastry tip (see below) for piping the meringue on top, feel free to use a star tip as she did (click link below for recipe). Fancy!
Martha Stewart’s Chocolate Graham Cracker Cupcakes with Toasted Marshmallow (AKA: S’mores Cupcakes)
I’m in the T.K. (test kitchen) and staying there until I perfect the Bauder’s Pharmacy Peppermint Bar that I SAVOR every year at the Iowa State Fair. It is pure peppermint perfection. Bliss. It is one of the few things I eat at the Fair and completely submerge myself in. If you see this scenario Me + Peppermint Bar, be prepared to = IGNORED. I love them. And I promise to give you a suitable ‘copycat’ recipe as soon as I can. I probably won’t nail the ice cream part, but I’m sure I’ve got the rest of the bar on lock. Until next time!
Oh and PS: after re-reading this post-publishing… I noticed I referenced ‘camping out’ in the first paragraph. I want you to know, my idea of camping out is a bonfire followed by an air conditioned abode with SHelter, SHowers and … SH…. ummm toilets. Just wanted to throw that out there! Kudos to the avid tent-campers I know!
