The recipe for Butter Dips is one of the most coveted family recipes that I’ve gained in my recipe book in the last year. These delightful tender biscuit like fingers go with virtually any meal and they are so EASY to make. When I don’t have time to bake bread and need something easy that can fit into that role on the dinner table, this recipe is my go-to. I serve them with soups, salads, a delicious side to a steakhouse dinner, breakfast with butter and jam, on a saucer with tea and about a million other ways.
This foolproof recipe was handed down to me by my lovely mother-in-law, Sandi. She’s one of the most wonderful people I’ve ever met. She is kind, funny (we have the same sense of humor), supportive and is the best listener and friend. My father-in-law Harry is the same way.
He’s just like my husband, only a few years older. Harry is sweet, tender, methodical and is one heck of a hog guy. I’m so lucky to have great in-laws, and I tell people frequently that I hit the in-law-jackpot. I’m thankful for every day with them, and every meal we share. Butter dips are most always on the table when we dine at their house.
We keep quite a few pigs at Harry and Sandi’s house. We get to swing in randomly and see them. We rely on them to do chores when we are out of town, and coming up, Harry will be farrowing 3 sows for us while we are out of town. (OINK, Diamond and Cherry D. if you were wondering.)
(The picture below is of my husband and son and our Yorkshire sow who had pigs on Christmas Eve. Affectionately, her name is Sandra. We love her and she’s a great Mama. She’s in the farrowing crate where she will be for another couple weeks until her piglets are weaned, then it is back outside, though she’s comfortable in the warm farrowing room.)

Butter in the bottom of the baking dish makes these biscuit fingers so delicious.
Sandi's Butter Dips
- 2 1/4 C flour
- 1 1/2 tsp salt
- 1/4 C sugar
- 1 TBSP baking powder
- 5 TBSP cold butter cubed
- 1 C cold milk
- 5 TBSP *melted butter there is a total of 10 tablespoons of butter in this recipe. That equals one stick, plus 2 additional tablespoons.
- Preheat oven to 425 degrees F.
- Combine flour, salt, sugar and baking powder in a large bowl. Cut in 5 TBSP COLD butter until butter is pea sized. Add milk, stir until incorporated. Turn out on floured surface and pat into an 8"x12" rectangle. Slice down center of length of dough. Slice in 2" intervals, to make fingers. Melt butter, spread in 9x13 baking dish. Place fingers on top of butter. Bake at 425 degrees for 20-25 minutes or until firm to touch in center, and lightly golden. Serves Makes 18-22 biscuit fingers depending on how big they are cut.

ok! these are a hit at our house. And was able to adjust it to dairy free pretty easily however I need to adjust something or other. Taste is great but I think my texture is off. And getting them off the counter (yes floured counter) is absolutely a bugger! Help! What did I do wrong?
