I think my Dad is quite the cattleman.  Now, he’s not the horseback, roping, wrangling type of cowboy you may expect he’d be since I dubbed him with the ‘cattleman’ distinction. Plain and simple, the guy is good with his cows.  He has run a good number of cow-calf pairs by himself since I’ve been a little kid. He’s calm and quiet around his cattle and approaches them very subtly and on foot or on an ATV if absolutely necessary or if we’re travelling far.  This time of the year is when he starts ‘locking them up’ in safe well bedded warm areas when they get close to having their calves.  He’s quite busy with his bovine-beauts, making sure they are well cared for and when their calves hit the ground they are in a safe place, away from the unpredictable burden of the elements of an Iowa winter.

Memories of moving cows when I was younger often involved me standing with a fistful of rocks in a questionable getaway area (road, driveway etc) ‘just in case’ the bull was feeling spry or some cow decided not to take the beaten path to the nearby pasture.  Looking back I think to myself, “Seriously? What could one little fistful have rocks have done to stop a 1200 # blonde hair hating bull?”  Well I think the answer is nothing at all, but I can assure you I always wore my tennis shoes and laced them up tight when we’d move cows… just in case.

All of this madness leaves a guy seriously hungry.  I just made this wrap and plan to take it to him today!  Plenty of meat, potatoes, peppers and eggs will keep him satisfied and not having to go home for a snack.   (This guy is 6’9″.. he eats quite often).  I think this would be perfectly suited to take to ‘show day’ or ball tournaments etc.  Just be sure nothing is too ‘steamy’ when it goes into your tortilla, otherwise you may end up with a little too much moisture and it could tear.  *Full recipe at the end of the post.

Steer clear of this one!  (She’s actually normal and sane of mind. She just looks extra creepy when I take her picture.  Yikes.  I think it is the short ears. She must’ve gotten too cold after she was born. That’s my guess since she isn’t one of our heifers we kept back, she’s a cow we purchased. Hello frostbite.)

Cattleman Approved Steak Wraps

Makes 6 large wraps

6 extra large tortillas

8 eggs, scrambled and seasoned with salt and pepper

1 lb flank steak, cut into 1″ cubes, seasoned with Lawry’s Seasoned Salt and fried in a medium high heat skillet 5 minutes.  Cooled slightly

2 medium sized potatoes, cut into 1″ cubed, pan fried until tender and golden, 8-10 min.

2 bell peppers, cut into 1/2″ strips lengthwise, cooked with potatoes when they are close to being done (last 2 minutes)

Place 1 tortilla on a sheet of aluminum foil.  Top with a line of scrambled eggs down the center. Add 1 slice of cheese or 2 TBSP of shredded cheese.  Add steak, potatoes and peppers.  Roll up and secure with aluminum foil.  Keep warm.

Assembly looks a bit like this… disregard the low-cal wrap, that should NOT be used here.  A burrito sized sturdy flour tortilla is a must.
