This is a simple recipe using fresh fruit, a simple ‘sauce’ and homemade granola. It hits the spot when you need a sweet fix and don’t totally want to undo a good day of eating well. This recipe is one of the promised recipes for Lori, here you go! Weight Watchers Points Plus = 4 points per parfait *if using 1 TBSP honey and a light dairy product.
Strawberry Kiwi Parfaits (serves 2)
10 strawberries (hulled and chopped into halves or fourths)
2 medium kiwi (peeled, chopped into sixths or eighths)
1/2 C sour cream, light sour cream, light yogurt or greek yogurt
1-2 TBSP honey (or more to taste)
1 tsp vanilla extract or vanilla bean paste
1/2 C homemade granola or store bought granola
Chop fruit, divide amongst 2 glasses or dishes. Set aside. Combine sour cream, honey and vanilla extract in a small bowl. Stir well. Scoop 1/2 of the sour cream mixture on top of each fruit filled glass. Top each parfait with 1/4 C of homemade granola. Serve immediately.
*You can layer this in tall parfait glasses if desired.
