Peanut Butter Bars

Ingredients

  • 3/4 C butter at room temperature
  • 1/2 C creamy peanut butter
  • 1 1/4 C brown sugar
  • 1 whole egg + 1 yolk
  • 1 teaspoon vanilla
  • 1/2 tsp salt use less if desired. 1/4 tsp is fine
  • 1 3/4 C flour
  • 1 tsp baking soda
  • 3/4 C rolled oats

Instructions

  • Preheat oven to 350 degrees Cream butter, peanut butter and brown sugar together until fluffy.  Add whole egg, egg yolk and vanilla, mix until combined.  Add salt, flour, soda and rolled oats, mix thoroughly.  Spread in greased 9x13 inch pan.  Bake for 15-18 minutes until golden brown and toothpick comes out clean when pushed into center of the dough.  Remove from oven, cool until warm or cool completely so frosting (recipe followwill not melt.
  • Peanut Butter Frosting

  • 1 stick of butter
  • 1/4 C peanut butter
  • 1/2 tsp vanilla
  • pinch of salt
  • 3-4 C powdered sugar
  • 3 TBSP milk (more or less until smooth consistency is reached)
  • Combine all ingredients and beat together with hand mixer or in stand mixer fitted with paddle attachment, add more milk to reach desired consistency.  Frost cooled bars.

Notes

*Optional additional toppings: chopped dry roasted peanuts, chocolate ganache drizzle, sparkling sugar, sea salt.
