Simple Berry Smoothie

Simple and satisfying breakfasts don’t have to be complicated. When I break tradition and stray from my eggs and bacon standard, you’ll find me throwing good things in a blender to make a breakfast that’s tasty and convenient on-the-go. And, no worries… there isn’t any spinach or kale in this smoothie. Why ruin a good thing? Spinach is for salads, and kale is meant to be sautéed with garlic. The end.

Last year I toured AE Dairy, and during the taste test portion of my tour, I fell in love with the AE Almond Crème Greek Yogurt flavor. This, ultra creamy, deliciously flavored Greek yogurt has been a staple in my house ever since. My kids love it, and it is fun to play with in the kitchen too. And by play, I mean recipe test. Though, my son often dips his finger into the carton and eats this stuff with his fingers, much to his sister’s dismay.

A little known fact about my daughter: She is obsessed with cooking shows and Alton Brown. She enjoys the science of food just like her Mom. Bonus: We don’t have to watch annoying cartoons when we have a little down time together. She’s always interested in playing “Cutthroat Kitchen” or “Chopped” (Food Network competition shows) in our own kitchen. She’s a TINY bit competitive like her Mom too… a TINY bit.

As we made this smoothie, we worked together to get the right combination of protein (did you know AE Greek Yogurt has nearly double the protein of regular yogurt and a little less sugar) and energy, with a delicious result. My daughter is growing like a weed and it is important to me that she keeps her strength and energy up for all of her activities. She shared this with her brother, and it made me feel good knowing that each of them got 11 grams of protein, for their breakfast that day! It was a busy day and no one complained for a snack until we ate lunch. Win.

Simple Berry Smoothie

Makes two smoothies
Ingredients:
1 1/2 cups frozen red raspberries
1 1/2 cups frozen blueberries
1 6 oz. container AE Almond Crème Greek Yogurt
1 cup AE 2% Reduced Fat Milk
1/2 tsp vanilla extract or clear imitation vanilla flavoring
2 tsp honey (optional)
Place raspberries, blueberries, yogurt, milk, vanilla and honey in a blender. Process until smooth. Serve immediately. Makes 2 smoothies. (If too thick, add more milk to achieve desired consistency.  If too thin, toss in additional frozen berries.)
Other add ins: banana, regular rolled oats, chia seeds
