This past week we’ve butchered, cured, and smoked our own pork belly turning it into some of the finest bacon I’ve ever had.  It was amazing.  We’re going to tweak that recipe and I’ll get it too you soon. Until then, may I turn you on to my new favorite sandwich… the BLT&G.  Thick slices of artisanal pecanwood & applewood smoked bacon, lettuce from my container garden on the deck, flavorful seasoned tomato slices and homemade guacamole sandwiched between two slices of toasted Honey Oatmeal Bread.  I’m sure many of  you have tried and love this exact sandwich… for those of you that have never travelled down Guacamole Ave. on the ‘pilgrimage de BLT’, give this a try.  Is this heaven?  No honey, it is Iowa… and that’s pork you’re eating.

We had the honor of hosting one of my very best friends of all time overnight.  He loved the bacon and even got to go out with us and push the Duroc gilts around the machine shed.  They didn’t mess with this big guy!  Come back soon bud!

This little girl had her last ball game tonight.  I just keep checking off the milestones of the summer… she’ll be going to kindergarten soon and her brother and I will be having lots of new 1 on 1 time.

Bodacious BLT Sandwiches

Makes 4 large BLTs

Ingredients:
8 slices of hearty bread, toasted
2-3TBSP mayonnaise
1 recipe homemade guacamole (see recipe that follows)
16-24 oz. thick sliced applewood smoked bacon, fried/baked/cooked until chewy-crisp
2 small tomatoes, sliced to desired thickness, seasoned with a pinch of salt and a dash of pepper
3-4 C garden lettuce

To assemble.  Lay out slices of toast.  Cover 4 with mayonnaise, evenly. Set aside. Cover the remaining 4 slices with guacamole.  Top guacamole with a few bacon strips (or a lot!), add tomato, lettuce and place mayo-covered slice of bread on top of lettuce.  Serve immediately.  Makes 4 large sandwiches.

Homemade Guacamole
Small batch for BLT+G sandwiches

3 avocados, ripe, flesh scooped and mashed lightly
1/3 C chopped tomatoes (I just chop the outer parts, discard the inner watery parts)
3 TBSP finely chopped red onion
2 small cloves of garlic, finely minced
Juice of 1/2 a lime
Large pinch salt
dash of black pepper

Mix together, serve immediately.  Makes 1 1/2 C and I like it generously spread on my sandwich!
