The Best Cookies, Ever.

I would love to story tell about these cookies and how wonderful they are, but today I’ll save it.  You need to gather the ingredients immediately and start making them, NOW!  They are divine!  *Don’t skip the sparkling sugar, that is what gives these cookies an undeniable crunch!

Cherry Chocolate Oatmeal Crunch Cookies

2 sticks unsalted butter, room temperature

1 C brown sugar, packed

1/2 C granulated sugar

2 eggs

1 tsp vanilla extract

1 1/2 C all-purpose flour

1 tsp baking soda

1 tsp salt

2 1/2 C oatmeal (regular, not instant)

3/4 C miniature semi sweet chocolate chips

3/4 C dried cherries, chopped or Craisins

*Optional: 1/2 C walnuts, chopped

Sparkling Sugar, Turbinado Sugar or Regular Granulated Sugar *For Rolling

Preheat oven to 350 degrees.

Cream butter for 30 seconds, until smooth.  Add sugars.  Beat 2 minutes until fluffy and smooth.  Add eggs and vanilla, beat until well combined.  Sift flour, baking soda and salt together.  Slowly add dry mixture to wet ingredients, mixing only until combined.  Add oatmeal, chocolate chips and dried cherries.  Mix until combined.

Scoop mixture with 1/4 C (2 oz.) cookie scoop.  Roll in sparkling sugar for great crunch.  (Regular sugar may be used for rolling too.  Press dough balls slightly to flatten tops.  Bake for 12-15 minutes, oven temperatures will vary so watch your cookies starting at the 12 minute mark.  Cookies should be golden around the edges and set in the middle.   Remove from oven and let cool for 5 minutes on the cookie sheet, then transfer to a cooling rack.  Makes 18 large cookies.

The story of these cookies is rather short, I just started making them with oatmeal this past week.  I have a cousin with a new and TOTALLY adorable little girl.  I mean, seriously cute.  She loved these cookies and as any new-Mom would attest, anything that is baked with love tastes even better.  Throw in 2-4 TBSP ground golden flax and 2-4 TBSP of brewer’s yeast and you’ve got yourself some mighty fine lactation cookies… if you dare.  I get to see said newborn little girl tonight… SQUEAL!!!
